Cooking leftovers in your motorhome: vegetable biscuits + motorhome truffles [BONUS!]

Leftovers, in the motorhome too, you have them regularly. At least, I do. A piece or two of carrot, the stem of a broccoli and some courgette ends soon end up in my fridge. And often they are left lying around eh... Well, not any more! This recipe turns leftovers into a delicious snack that you can vary to your heart's content. And, of course, you don't necessarily have to use leftovers.

Vegetable biscuits à la Claire

Delicious as a savoury snack with drinks, in between meals or as a side dish with your dinner. These vegetable biscuits are always a good idea. You can easily save them for the next day and if you want to go all out: decorate them with crème fraîche and fresh herbs or a tomato, for example. Or dress up and top the crème fraîche with a slice of smoked salmon.

Healthy and tasty! I think you can even get children to eat vegetables this way. Without complaints. Another tasty combination to try: spring onion, corn and carrot with Mexican herbs.

Ingredients for the vegetable biscuits

  • Scraps of different kinds of vegetables
  • Eggs
  • Flour of your choice
  • Salt & pepper
  • Baking soda
  • Spices of your choice
  • Oil or butter for baking

Quantities

Of course, this depends on the number of persons, how big the appetite is and how many leftovers you have lying around.

Preparation

  • Chop the vegetables into small pieces. It doesn't have to be brunoise, but just chopped small is fine.
  • In a bowl, mix two eggs with two spoonfuls of flour and a little baking soda. Season with salt & pepper. Be careful with the baking soda, often half a teaspoon is enough. Do you use too much? Then it may taste bitter.
  • Do you have (fresh) herbs? Then you can also add these now.
  • Mix the chopped vegetable mix into the batter.
  • Is the mixture too dry? Throw in an extra egg. Too wet? Add an extra spoonful of flour or some more vegetables.
  • Heat the frying pan with oil or butter and spoon the batter into the pan. I find small 'biscuits' cosy to eat and always make a biscuit out of one large tablespoon. Then 2 or 3 will fit in the pan at a time.
  • Carefully flip the biscuits when they are golden brown. If necessary, place on a kitchen towel to drain if you find them too greasy.
  • Eating them straight away is best, as the edges will still be crispy from baking! Don't forget to sprinkle a pinch of salt on top before sinking your teeth into them.

Tip: firmer vegetables like carrots and pumpkin, but also courgettes can be grated instead of cut. With the latter, make sure you squeeze out the grater. This will prevent you from getting very wet biscuits when baking.

Motorhome truffles!

And, want to make friends for life at the RV park or campsite? Then make the camper truffles right away too. But watch out, you'll keep putting them in your mouth. So mainly hand them out to the neighbours, or go for an extra run this afternoon. This is also a great recipe to make with kids!

Ingredients for the motorhome truffles

  • Ginger / café noir / bastogne biscuits
  • Monchou
  • Chocolate bar (milk or dark)

Preparation

  • Use an (empty) wine bottle, wooden spatula or your hands (or rolling pin if you have one with you) to smash the biscuits in the packaging.
  • Is the packaging broken, or already open, and are the biscuits not yet sufficiently crumbled? Then put them in a ziplock bag and smash them further. It does not have to be an even powder, a little bite is just nice.
  • Mix the monchou through the pulverised biscuits, and if in doubt, use 2/3rds of the packet of monchou first. You want to get a firm but malleable mass. You can always add more monchou.
  • Roll balls of the mixture with your hands and then put the balls in the fridge to stiffen. I think a "euro coin size" is perfect, but of course this is up to you.
  • Meanwhile, heat the chocolate bar au bain-marie until it is liquid.
  • Take the truffles out of the fridge and poke a skewer or fork in them. This way you can easily get them through the melted chocolate. Is that too much hassle? You can also put the truffles on a plate and dip a fork in the melted chocolate. With that, you swirl the chocolate in strands over the truffles.
  • As the truffles were cold, the chocolate will solidify nice and quickly. Unless it's very hot in the motorhome, in which case it's better to put them back in the fridge for a while to harden.

Don't forget to offer the neighbours a motorhome truffle too! Bet they make coffee for you the next day!

Quantities

Depends on the type of biscuits you buy and how many biscuits are in one pack. On average, one pack of monchou is enough for one pack of biscuits. But even if you happen to have half a pack of speculoos lying around, this of course lends itself perfectly to motorhome truffles.
